Green olives are olives that are picked before they are ripe. Black olives were picked ripe and dipped in an iron solution to stabilize their colour. Both types are soaked in milk solution of sodium hydroxide and washed nicely to remove oleuropein, a naturally bitter carbohydrate. The green olives are allowed to ferment before packing in a brine solution. But the black olives are packed directly.
Olives are high in fibre and fat. 69 to 78% of the olive is oil, unsaturated fat.
Olives are used in salads. Olive oils are used as any other vegetable oil in the preparation of various dishes. Olive oil has a good smell and is good for the health. It is the best of all oils. It has less smoking point like ghee.
Olive oil has a higher concentration of vitamin E than olive. Hence it oxidises and turns rancid quickly if exposed to air.
